RICANDI
Ricandi Winter Frittata

8 potatoes cut with skins on into 1” cubes
3 large carrots peeled and then cut in 1” slices
3 onions peeled and then cut into quarters
4 cloves of garlic sliced in half and then half again.
1 handful of fresh rosemary chopped or 1 heaped Tbsp Rosemary
Olive Oil
Pepper and Salt
Put all the above in a oven dish and roast turning every 20 minutes.  Roast for approx 1 hour – 1 ½ hour on 200 degrees.

Then

Grate tasty cheese over the roasted vegetables and pour over 8 beaten eggs.
Return to oven and cook for 20 minutes or until golden.  Bake at 200 degrees.
