Moist Apple Cake

2 eggs
1 cup sugar
½ cup oil
2 cups plain flour
4 cups of peeled, quartered and then sliced apples
1 tsp vanilla
½ tsp salt
½ tsp baking soda
2 tsp cinnamon
½ tsp nutmeg

Mix all the wet ingredients together then add the dry.  Mix all together into a reasonably doughy mixture.  Then add the sliced apples

Bake for 45 minutes at 180 degrees

Sprinkle with icing sugar when cool and sever with cream (or clotted cream)

This cake becomes more moist every day.
