(Cup of Apple Cider & honey tea)

Ricandi's Amazing Fruit Salad
Serves 2

Slice 8 large strawberries
Slice 2 bananas
Cut 1/2 pawpaw into 1cm squares
Add 1/2 cup fresh Walnuts
2 Large Tablespoons of dried coconut
1 cup of organic Yogurt.  (I use mango)
1 organic gingernut biscuit

Mix all of your fruit together and put into 2 bowls
Sprinkle with coconut and then with the walnuts
Put a good scoop of a good quality yogurt in the middle.
Chop the Gingernut biscuit into 1/2cm squares and then sprinkle on top of yogurt.

The biscuit and walnuts make this fruit salad out of this world.  It gives it a really lovely texture.

Replace with other fruit that is available such as figs, plums, pear, prunes.
If you replace the nuts with almonds, make sure you soak the nuts over night.



Morning Tea
Espresso Coffee & Biscotti

(2 soaked Brazil Nuts)

Lunch
Open Sandwich

Lay 2 slices of Vogels or wholegrain toast on a plate.
Spread with avocado.
Roll up a leaf of sliverbeet and slice very finely and then spead on top of avocado,
chop up a 1/2 Tbspoon of fresh coriander and sprinkle on top.
Grate fresh beetroot and apply to top of sandwich.
Lay half a tomoto sliced on top of the beetroot
Sprinkle with 1 tsp of chopped capers
Using a peeler, peel thin strips of red capiscium
Sprinkle with fresh calendula flower petals
Dribble a few drops of Balsamic Vinegar
Sprinkle fresh salt and pepper to finish.

Other products can be used such as grated carrot, olives, toasted sunflower seeds, lettuce, other herbs
