RICANDI
Diana's Quick Risotto
2 - 3servings

Add 1 cup of short or medium grain rice with 2 cups of water.

Add 1 slightly heaped tsp of Rapunzal Vege Stock

Add a 1 Tbsp of Soya Sauce

Add cracked pepper and a pinch of salt

Bring to a boil on the highest heat.

Add 1 x grated carrot, 1/2  diced red pepper and 1 x sliced spinach and 1x grated zuchhini.

1 handful of sultanas.

Add to rice and stir.

Replace pot lid and turn off heat and let it sit for 10-12 minutes.




Serve with toasted pinenuts, chopped fresh tomato, chopped olives and chopped avocado sprinkled on top.
