Italian Citrus Granita:

750 mls Water
4 - 5 Lemons or equivalent of any citrus fruit (mixed fruit is nice)
100 g Organic Sugar

Take a bowl and pour in the cold water, pour in the strained lemon juice and add the sugar. Stir until the sugar has been dissolved.
- Pour this liquid into a container not higher than 3 - 4 cm (30 - 40 mm).
- Put the container in the freezer.
- After one hour you most probably will see little crystals on the surface, espescially on the walls. Mix it with a fork.
- After every 1/2 hour or 1 hour mix the ingridients, espescially the crystals on the walls. There shouldn't be a hard crust on the walls.
- The finished Granita should consist of many little crystals.
Just enjoy.

Italian Mango Granita
1 Mango
100g organic sugar
Juice of 1 lemon
250ml  water

Method
Puree all ingredients together.

Freeze in a baking dish, mixing every hour until crystals become light and fluffly.


Italian Strawberry Granita
1 punnet of strawberries
100g organic sugar
Juice of 1 lemon
250ml  water
Method
Puree all ingredients together, then strain through a sieve to remove small seeds.

Freeze in a baking dish, mixing every hour until crystals become light and fluffly.
